An increasing number of students are coming to campus faced with dietary restrictions. This is especially concerning to students and parents when faced with a new environment away from home. Denver Dining Services is committed to meeting the needs of students with food allergies. Our expectations are for you to enjoy meals on campus with food you can eat without compromising nutrition, flavor or variety. Below are the steps we take to ensure our students have a dining plan that meets their dietary requirements.

The college experience can be an incredibly difficult one for many new students and parents alike. Unfortunately, one of the hardest-hit groups are students with dietary restrictions. In many cases, these students have never really had to think about what ingredients are in the food they are eating due to it being predominantly handled by a parent or caretaker. As the number of students enrolled at DU with these dietary restrictions continues to grow, it has become more important than ever to create a dining experience that accounts for these student's needs.  

 
 

Denver Dining Services has taken the challenge head-on, seeking not only to accommodate but to go above and beyond. Our expectations are for you to enjoy meals on campus with food you can eat without compromising nutrition, flavor, or variety.

Gina is Denver Dining’s Registered Dietitian, Nutritionist, and Sustainability Manager. As an avid nutrition enthusiast, Gina is excited to not only meet with students who have dietary restrictions, and allergies, but also to meet with students hoping to create lifelong healthy habits.  

Her love for nutrition began from her experience working at a family-owned organic farmers' market. This early exposure to food lead to her interest in how the foods people eat affect their bodies. Her interest in nutrition prompted her to pursue and later earn a Bachelor's Degree in Human Nutrition and Dietetics from the Metropolitan State University of Denver. She completed a dietic internship at Sodexo and has since earned the ServSafe Certificate which makes her an Allergy Certified Master Trainer.

Our Staff 



In addition to having access to Gina’s dietary expertise, students will also have the services of Director of Operations *Tracy Williams* at their disposal.  

 
 
 

As the Director of Operations, Tracy is in charge of working with students that have restricted diets, and allergies to create menus that fit the students’ needs. Additionally, Tracy directs the campus food sustainability program in conjunction with the Office of Sustainability. Tracy credits the position with making him more conscientious and resourceful when creating menus for the campus and students.  

 
 

Tracy is a food industry veteran, having held the positions of Operations Manager, and Executive Chef in the hospitality industry. Regardless of position, Tracy has always been passionate about food. A passion which he procured from being very hands-on in the kitchen with his mother from a young age, as well as helping out with the family crops.  

 
 

Tracy is very passionate about local foods and also loves seafood like Maryland Crab Cakes made with Blue Crab from the Chesapeake Bay as well as Seafood Gumbo in Louisiana that uses gulf shrimp and oysters.  If you ask him, he would be happy to give you a great recipe anytime. 

 

 

 
 

Our team of culinary trained chefs, experienced supervisors, and production personnel alike take pride in going above and beyond to exceed student expectations. Our management are AllerTrain certified which means that they have taken the time to educate themselves on dietary restrictions and have made the effort to really understand how to work with every student regardless of allergies.
