Students with Food Allergy Resources

An increasing number of students are coming to campus faced with dietary restrictions. This is especially concerning to students and parents when faced with a new environment away from home. Denver Dining Services is committed to meeting the needs of students with food allergies. Our expectations are for you to enjoy meals on campus with food you can eat without compromising nutrition, flavor or variety. Below are the steps we take to ensure our students have a dining plan that meets their dietary requirements.

Schedule a Meeting with our Managers

Depending on where you live on campus we recommend a meeting with our management team and nutritionist in the dining hall closest to your residence hall. By allowing us to get to know you and your preferences we are better prepared to have food available for you. It also provides for open communication on how things are going and what other options we should be working on for you. We will go to great lengths not to make you feel uncomfortable or singled out. You are not alone as we support many other students with similar issues.This is a service we are happy to provide to ensure meeting your expectations. Our nutritionist, Eva Bennett will touch base with you weekly. You will also be able to meet with the manager and chef as often as you feel necessary.The Resident District Manager will be available any time you feel we are not meeting your needs.

Fully Stocked Alternative Allergy Free Products

In addition to menus you can enjoy, Centennial and Nelson Dining Halls also offers stocked coolers with Allergy Free food alternatives. This includes gluten free, dairy free, and nut free breads/milks/cheeses/desserts and much more. It provides additional options beyond the hot food production we can offer you. In addition all DU cafeterias include ingredient listings for all foods displayed in the serving line and on the TV screens to make sure you are informed. If there are products you would like to be added to this cooler please inform the manager or nutritionist and they will be happy to respond.

Simple Servings - Nagel Hall Market

Nagel Hall Market offers an Allergy Free venue called Simple Servings, an award-winning wellness concept.Simple Servings features delicious, homemade meals, prepared without 7 of the 8 FDA most commonallergens. We serve fin fish. You can enjoy a delicious meal without any of the following allergens:
• MILK
• EGGS
• GLUTEN (WHEAT)
• SOY
• SHELLFISH
• PEANUTS
• TREE NUTS
When dining at Simple Servings in Nagel Hall, you will find favorites like roast pork, rotisserie chicken, baked sweet potatoes, steamed green beans, and much more!You don't have to compromise flavor when eating allergen free food! Simple Serving menus also meet our Mindful criteria, and 75% of the menu is considered healthy choices.

AllerTrain Certified Staff

allertrain logoDenver Dining prides itself on working directly with our students to exceed their expectations. Our team of culinary trained chefs, experienced supervisors and production personnel take pride in making students happy and are required to be certified Allertrain.  This program provides understanding and education on how we should work with every student, regardless of their allergies.


University of Denver is proud to offer MyZone, allergy-safe pantry, and Simple Servings, a allergen-safe, hot food station. 

My Zone

My ZoneMy Zone is our campus “pantry” located at _____________, where food items needed by students with Celiac disease or food allergies are stored and prepared with precautions against cross-contact. This special area is free of tree nut, peanut, and gluten-containing ingredients and products. My Zone gives students the ability to be involved in their own allergen-safe meal preparation. Simple Servings

Simple ServingsSimple Servings is our allergen-safe, dining option for our customers with food allergies, gluten intolerance, or those who prefer plain and simple foods. The Simple Servings station offers food free from common allergens: peanuts, tree nuts, shellfish, wheat, soy, milk products, and eggs.  All foods offered are also free from gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contact with food allergens. Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods.
