Meet the Dietitian

Gina Vega, RD
Gina Vega is our Registered Dietitian, Nutritionist and Sustainability Manager; her love for nutrition began at a young age while working a local family-owned organic farmer’s markets. This early exposure to food sparked her interest in food and its effects on the body.

Gina received her Bachelors of Science degree in Human Nutrition and Dietetics from Metropolitan State University of Denver and she completed her dietetic internship with Sodexo. Throughout her internship and work exposure in the dietetic world she has honed in her skills in hospitality, research, and clinical.  She has boarded her skill set by acquiring a ServSafe Certified and becoming an Allergy Certified Master Trainer with AllerTrain.

Gina is dedicated to making the food on campus more delicious, nutritious, sustainable, and easier to navigate for those with dietary allergies and restrictions.  She looks forward to meeting students across campus and helping them build lifelong healthy habits.

Her nutrition philosophy is based on a core method that inspires you to consume nourishing and delicious food, endure the life you desire, and truly prosper in every area of your life.

Tracy Williams, Director of Operations

Allergy and Alternative Diets Resource

Tracy has a wealth food service experience and has been employed with Sodexo since 2003 in various leadership roles. Prior to working for Sodexo Tracy was in the Hospitality industry as an Operations Manager and Executive Chef.
Tracy developed his passion for food from his parents, mainly his mother as he was very hands on in the kitchen with her. His family grew and harvested fresh vegetables which further sparked his desire to be in the food service industry.
Over the past few years Tracy has expanded his knowledge of health and wellness.  He has the responsibility of working with students that have restricted diets, allergies and directs the campus food sustainability program in conjunction with the Office of Sustainability. The aforementioned has made him more conscientious and resourceful when creating menus to meet the students’ and campus needs.
Tracy is very passionate about local foods, and also loves seafood like Maryland Crab Cakes made with Blue Crab from the Chesapeake Bay and Seafood Gumbo in Louisiana using gulf shrimp and oysters and the like.  If you ask him, he would be happy to give you a great recipe.
